Some folk like to use an omelette pan with a lid when making their omelets. They say the omelet comes out fluffier and is easier to slide onto a plate for serving. Personally, I find that a lid on an omelet pan creates too much steam and condensation which drips onto the eggs, making the omelet less solid. Either way, I love omelets so I’d eat them regardless of the pan.
